A R$ Sim is the drive for I-AG, CS$, and I-D. I once built a city with no commercial and a handful of industries. Filled it with 255 farms. Build a city that encourages R$ and you'll have a lot of farms. Educate your R$ Sims so they become R$$ or R$$$ and farm demand will drop.

In SimCity 1 you have Residential, Commercial, and Industrial. SimCity 4 has the same basic structure R/C/I. However, within these groups there are sections defining wealth level: R$, R$$, R$$$ are the thee wealths of your residents. Commercial zones are broken first into two groups Services and Office, which has respective values CS$, CS$$, CS$$$, CO$$, CO$$$. Industrial isn't called by wealth, it is called by the type of industry. IA is farms, ID is dirty ($), IM is manufactoring ($$) and IHT is high-tech ($$$).
Things get more complicated, as there are different education levels of sims. Different education levels demand different jobs.
An uneducated-low-wealth-sim (R$ EQ1) makes about %600 percent demand for farms. If you have 100 such sims, you need to make 600 farm jobs. Of course, then you have demand for more sims and then demand for even more farms. The purpose, I guess, is for us to be able to farm the heck out of the region until we feel bad about the fact that they can't tie their own shoes. As Jim says, just give 'em some schools and you'll see the demand drop.
You also wont be able to make more farms when your total non-farm population (R+C+I) is greater or equal to 30,000.

(i played sim-city 1 in 1988 (ninetendo?), sim earh, sim ants, spores; i liked sim earh, and sim ants; this sc4 is better than the original , i think, the difficulty option was badly needed and the advisors are great; the orininal was harder, frustrating to me, especially if you got into trouble; thanks again;
Farms don't upgrade; what grows is there for good.

??? did you create a low, medium, or high density business zone? also, how many Sims are living in your town? I think it's time to experiment with the game until you find how to get the results you want. Answering questions could ruin the fun of discovery. It's all about math. X number of Sims = this reward. X amount of education = this opportunity. Police, fire, and a medical clinic = this reaction.
