Hopefully this isn't a stupid question but here goes:
What stage builings will each level of zoning density support?
Eg. Light residential will support buildings upto stage X
etc?

Zoning density is set for each individual lot so there aren't any hard rules but in general, light density will support stage 1/2/3, medium density 4/5/6 and high density stage 7/8.
Yet again, it really depends on the lots themselves and wether or not the creator took care of proper zoning density. Most likely this is not the case and you'll find there's considerable overlap between stages vs. density. Especially stage 1/2/3 are prone to grow on all densities.
