Lox Eggs and Onions (L.E.O.)

This is a recipe I picked up from a resaturant just north of San Diego (whose name eludes me at the moment, but I will update this when I find out.) and have since slightly adapted. It's not original, but some people haven't heard about it, and it is a good dish.

Ingredients:
-.25lb Salmon (or lox, but if you use lox, keep in mind it has a much stronger flavor, so you may wish to use less)
-2 or 3 eggs
-1/4 of a medium-sized onion
-2 cloves garlic
-1 Tbsp Oil/butter

Begin by finely chopping the onions and adding to a pan with oil/butter over medium-high heat and begin to carmelize. The carmelized onions will provide a sweetness to balance the saltiness of the fish. Finely chop the garlic and add to pan about 3-5 minutes after the onions. When onions begin to brown, reduce heat to medium and add salmon (I tend to use 1/2 inch cubes). When salmon has mostly cooked (or lox has come to temperature) add the eggs and cook until they meet your taste. Serve warm with toast, bagel, or your favorite bread-type product. It's great for breakfast lunch or dinner.

hmmm Matt this actualy seems very tasty yum yum!!! It could almost be the counter part to my poor man's hash lol, breakfast style...

Another great recipe.  I do enjoy salmon and this recipe is definitely one I'll try.  Thanks for sharing it.
