Mahi Mahi with Pine Nut Honey Lime Sauce

This recipe does not require Mahi Mahi and should work well with any similarly flavored fish. As with my other recipes this far, it is cooking, and cooking is an art. Feel free to adjust ingredients to taste. I just came up with this recipe and I think it turned out pretty well. I forgot to take a picture of it, but then again I wasn't sure how it would turn out. I would be interested in hearing other's thoughts on it.
Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients:
1/2 pound Mahi Mahi
1/8 cup Pine Nuts
2 cloves garlic (chopped)
3 Tbsp olive oil
1 Tbsp honey (if you get yours from a little bear like I do, it's about one big squeeze)
juice of a lime
1 Tbsp maple syrup (optional)
Salt and Pepper

Pour 1-2 Tbsp olive oil into a pan over medium-high heat. Season Mahi Mahi with salt and pepper and place in pan, skin-side down. and add the nuts and garlic. After 4 minutes reduce heat to medium and turn fish 1/4 turn. After another 2 minutes, add the honey and maple syrup over the nuts/garlic and turn the fish 1/4 turn. After another 2 minutes (sensing a pattern?) give the fish one last 1/4 turn and add the lime juice. Two more minutes and the fish should be done and the sauce bubbling nicely. Plate the fish, pour the sauce over it and serve hot.
