I'm not sure I understand the behavior that the game follows when creating texture on the borders of a road, especially curves or diagonals. It seems that sometimes the road will be border by "dirt", other times by "grass", and other times it just looks like the regular texture that covers the land borders the road.
Is there any way to avoid the behavior (only have the regular terrain texture under the road), or to control where and when what texture pops up?
I hope I'm being clear, but I have a picture below to help illustrate what I'm talking about. See that some parts of the road have a lighter green border, while others just look like the rest of the terrain. Also some seemingly random parts of the road are bordered by dirt (you can see this at the bottom by the farm, but if I zoomed out there are other spots like this).

calavera, that's the result of the game's default wealth-level and zoning-dependent characteristics of textures. The grass is showing up because that Street tile is adjacent to Low-Wealth Low-Density, and the dirt is showing up because that tile is next to a farm.
The only way to change this would be to replace the underlay textures. I believe there are a couple mods out there that do just that.

The grass texture on the sides is also part of the roadway textures, not the sidewalk textures themselves. To modify the grass to match the terrain, you would have to edit the roadway textures, and there are thousands of those.

So if I understand this correctly, the road texture is determined by the lots adjacent to it. There is a separate road texture for a road adjacent to a low wealth low density zone than a road adjacent to a farm. This road texture includes the road and the underlying bordering "terrain", although the road image itself looks the same in either case. Then if there are sidewalks, those are layered on top of this texture?
A typical street or road texture comes in seven different variations - only the road without any grass or sidewalks for unzoned areas, with three different grass textures (low, medium and high wealth) and narrow sidewalks for low density zones, and three different concrete or pavement textures (which serve as the sidewalk; low, medium and high wealth as well) for medium and high density zones. If an agricultural zone or landfill is nearby, the texture for unzoned areas is underlayed with a dirt texture, which is not part of the actual road texture, though. As said before, all other grass or sidewalk textures are part of the actual road textures.
