AS you can see from the ingame pics, the ploppable water looks different when rotating the map. I've placed one lot and rotated the map around 3 times (have a look at the symbol denoting north and how the red tile changes it's appearance):

What am I doing wrong??? This way it's impossible to create a stream or pond ...?

I wouldn't worry about it too much. As you create your river/stream it will all look the same colour in your picture. Maybe if your turn rotate around it may change colour slightyly. But everyone else has worked with it so far and created some absolute mater pieces, even if I do say so myself.
I would suggest you creat your river/stream, do some experiments. But in the end I'm sure it will be great.

Well, it's not about color ... it's about the shape. If you take a close look, you will see that the shape in the red encircled tile changes. Problem is, if you create e.g. a river bank, from one side it looks like the plants and rocks of the bank are adjacent to the water, but if you turn the map, it isn't. As demonstrated here: from one side the boulder fits perfect, but after turning the map for 90 degrees ... uups.

And if you now place the new boulder adjacent to the water and turn back the map .. uups again.

So .. how do I do to place the boulder correct?
Ahhh, that is due to the water being rendered... um... 4m I think... above ground level. For best results lower the land slightly and the water will merge with the banks. Then place the rocks on the banks and they will poke through.
