Alright then, so even though I've laid out a ton of rail and several stations, trains never seem to appear on the tracks. I've set the number of cars/sims to High. Anyone know how to fix this?

The number of trains appearing on the tracks is depending on the usage of your rail network.
Try to "route query" your stations and tracks to see if there is any usage of them.
