MallowTheCloud started a tutorial on making maps from DEM data but I don't believe it is complete.  Nonetheless, you might be able to get some ideas from it:

Making Accurate-Scale Real-World Maps

Finally, you might want to look through the Mapping Applications and Mapping Tools article for DEM sources and related software.

Thanks for the links, this is exactly what I was looking for. Now I have something to do during the christmas holidays.
